  • 2 medium-sized Acorn squashes, cut in half and seeded
  • 1 pound Ground sausage, mild or spicy Can be substituted with turkey or lentils for a vegetarian option
  • 1 cup Cooked rice Could use white, brown, or a blend
  • 1 Onion, finely chopped
  • 2 cloves Garlic, finely chopped
  • Salt and pepper To taste
  • Herbs (thyme or sage) Your favorite herbs
  • Shredded mozzarella or Parmesan cheese For topping

Method
 

Preparation
  1. Preheat your oven to 400°F (200°C).
  2. Cut the acorn squashes in half and scoop out the seeds. Brush the insides lightly with olive oil and sprinkle with salt.
Cooking
  1. Roast the squash halves in the oven for about 30 minutes, or until tender and caramelized.
  2. In a skillet, sauté the chopped onions until translucent, then add the garlic and sausage. Cook until the sausage is browned and fully cooked.
  3. Stir in the cooked rice and season with salt, pepper, and herbs of your choice.
  4. Fill each roasted squash half generously with the sausage mixture.
  5. Top with your choice of cheese and return to the oven for another 5-10 minutes until the cheese is melted and bubbly.
  6. Let the dish rest for a few minutes before serving.

Notes

Store any leftovers in an airtight container in the refrigerator for up to 3 days. Reheat in the oven at 350°F (175°C) for best results.
