  1. In a large pot over medium heat, brown the ground beef until it’s cooked through. Drain any excess fat.
  2. Add the chopped onions, minced garlic, diced carrots, peas, and corn to the pot. Cook until the vegetables are tender.
  3. Pour in the beef broth and bring everything to a gentle simmer.
  4. Stir in the dried thyme, rosemary, salt, and pepper, mixing well to combine.
  5. Let the soup simmer for about 15 minutes, allowing the flavors to meld beautifully.
  6. Serve the hot soup topped with a generous scoop of mashed potatoes.
