  • 1 lb ground beef You can substitute with ground turkey for a lighter version.
  • 4 cups potatoes, diced Sweet potatoes can be used for a different flavor.
  • 1 cup shredded cheese Cheddar cheese works beautifully.
  • 2 cups mixed vegetables Recommended: carrots, peas, and corn.
  • 4 cups beef broth Homemade or store-bought is fine.
  • 1 medium onion, diced
  • 2 cloves garlic, minced
  • to taste salt and pepper
  • 2 tablespoons olive oil

Method
 

Cooking Instructions
  1. Heat the olive oil in a large pot over medium heat.
  2. Add the diced onion and minced garlic, sautéing until the onion turns translucent.
  3. Incorporate the ground beef, cooking until it’s browned. Drain any excess fat if needed.
  4. Stir in the diced potatoes and mixed vegetables, cooking them for a few minutes.
  5. Pour in the beef broth, bringing the mixture to a boil. Reduce the heat and let it simmer for 20-25 minutes, or until the potatoes are tender.
  6. Add the shredded cheese, stirring until it melts into the soup.
  7. Season with salt and pepper to taste.
  8. Serve hot and savor each bite!

Notes

For added flavor, consider adding Worcestershire sauce, red pepper flakes, or for creaminess, mix sour cream or cream cheese just before serving. If storing leftovers, keep them in an airtight container in the refrigerator for up to 3-4 days.
