Preparation
- Allow your steak to sit at room temperature for about 30 minutes.
- Pat it dry with paper towels and season generously with salt, pepper, and minced garlic.
- In a bowl, mix the softened butter with parsley, green onions, Dijon mustard, lemon juice, zest, and spices until creamy.
Cooking
- Heat a cast iron skillet over high heat until it's smoking hot.
- Add a splash of avocado oil to the skillet; then place your steak in and listen to that satisfying sizzle!
- After about 3-4 minutes, flip the steak. Add in the European butter, remaining minced garlic, and herbs while spooning the melted butter over the steak.
- Use a meat thermometer to check for doneness; aim for medium rare at 130°F.
- Once cooked, let it rest for at least 5 minutes to allow the juices to redistribute.
- Slice the steak against the grain and top it with a generous dollop of cowboy butter, watching it melt into the meat as you serve.
