  • 1 lb beef (chuck or flank steak)
  • 4 cups beef broth
  • 2 tablespoons soy sauce
  • 1 tablespoon hoisin sauce Can substitute with teriyaki sauce.
  • 1 tablespoon sesame oil
  • 1 teaspoon ginger (fresh, minced)
  • 2 cloves garlic (minced)
  • 1 package ramen noodles
Toppings
  • Soft-boiled eggs For topping.
  • Fresh greens (spinach or bok choy) For topping.
  • Crunchy vegetables (carrots, bell peppers) For topping.

Method
 

Preparation
  1. In your slow cooker, toss together the beef, beef broth, soy sauce, hoisin sauce, sesame oil, ginger, and minced garlic.
  2. Cover the slow cooker and cook on low for 6-8 hours, until the beef is tender and easily shreds.
Cooking
  1. Once cooked, remove the beef, shred it with two forks, and return it to the slow cooker to soak up all the flavors.
  2. Meanwhile, cook the ramen noodles according to package instructions. Drain them when done.
Serving
  1. To serve, place a portion of cooked noodles in a bowl.
  2. Ladle the flavorful beef broth and shredded beef over the noodles, and add soft-boiled eggs, fresh greens, and crunchy vegetables as toppings.

Notes

If you have leftovers, they can be stored in airtight containers in the fridge for 3-4 days. For longer storage, you can freeze individual portions, keeping the noodles separate to avoid mushiness. You can also marinate the beef in the sauces overnight for added depth of flavor.
