  • 2 pounds boneless, skinless chicken thighs or breasts
  • 3 pieces carrots, diced
  • 3 stalks celery, diced
  • 1 piece onion, diced
  • 4 medium potatoes, peeled and cubed
  • 4 cloves garlic, minced
  • 4 cups low-sodium chicken broth
  • 2 tablespoons tomato paste
  • 1 teaspoon dried thyme
  • 2 leaves bay leaves
  • Salt and pepper, to taste
  • 1/4 cup all-purpose flour (optional, for thickening)
  • Fresh parsley, chopped (for garnish, optional)

Method
 

Preparation
  1. In a hot skillet, sear the chicken for about 5–7 minutes until golden brown.
  2. Add the seared chicken, diced carrots, celery, onion, potatoes, minced garlic, and bay leaves into the slow cooker.
  3. Sprinkle the thyme, salt, and pepper over the ingredients, then give everything a good stir to combine the flavors.
  4. Pour in the chicken broth. If you're using flour for thickening, whisk it with a little broth or water beforehand, or simply sprinkle it over the stew and stir well.
Cooking
  1. Cover and let it cook on low for 6–8 hours or on high for 3–4 hours until the chicken and vegetables are tender.
  2. Remove the bay leaves, taste, and adjust the seasoning as needed.
  3. Serve hot, garnished with fresh parsley for a burst of color!

Notes

This stew is perfect as leftovers, can be served with crusty bread or rice, and freezes well. Make ahead for even better flavor.
