Ingredients
  

For the Chicken
  • 4 pieces boneless, skinless chicken breasts
  • 2 pieces lemons (juiced and zested)
  • 4 cloves garlic (minced)
  • 1 tablespoon fresh rosemary (chopped)
  • 1 tablespoon fresh thyme (chopped) Feel free to swap with oregano or basil
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 cup chicken broth
For the Rice
  • 2 cups rice Basmati or jasmine is recommended
  • 4 cups water For cooking the rice
  • Fresh parsley for garnish Optional for serving

Method
 

Preparation
  1. Add the lemon juice and zest to the slow cooker, along with minced garlic, rosemary, thyme, salt, and pepper. Stir to combine.
  2. Place the chicken breasts into the slow cooker, and pour the chicken broth over them to keep them moist.
Cooking
  1. Cook on low for 6-7 hours or high for 3-4 hours, until the chicken is cooked through and tender.
  2. About 30 minutes before serving, prepare the rice according to package instructions, using the hot water.
Serving
  1. Once cooked, serve the tender chicken over the fluffy rice and garnish with fresh parsley for a burst of color.

Notes

For added flavor, consider marinating the chicken in lemon and herb mixture for a few hours before cooking. Leftovers can be stored in an airtight container in the fridge for 3-4 days or frozen for longer storage.
