Ingredients

Main Ingredients
  • 3-4 pieces boneless, skinless chicken breasts
  • 1 cup shredded Jack cheese Substitutes of cheddar or pepper jack can be used.
  • 2 tablespoons olive oil
  • 2-3 cloves garlic, minced
  • 1 cup low-sodium chicken broth
  • ½ cup sour cream Greek yogurt can be used as a healthier alternative.
  • Salt and pepper to taste
  • Chopped green onions and paprika for topping

Method

Preparation
  1. Preheat your oven to 375°F (190°C).
  2. Rub olive oil over the chicken breasts and season them generously with salt and pepper.
  3. Heat a skillet over medium-high heat. Sear the chicken in the skillet until golden brown on both sides, about 5 minutes per side.
  4. Add the minced garlic and cook for an additional 30 seconds until fragrant.
  5. Pour in the chicken broth, allowing it to simmer while scraping the pan to incorporate any brown bits.
  6. Stir in the sour cream until everything is well combined. Let the mixture bubble for about 5 minutes.
  7. Top each chicken breast with shredded Jack cheese and transfer the skillet to the oven.
  8. Bake for around 15 minutes or until the cheese is melted and bubbly.
  9. Garnish with chopped green onions and a sprinkle of paprika before serving.

Notes

This dish pairs beautifully with creamy mashed potatoes, steamed vegetables, or a fresh side salad. For a fun twist, consider serving it with tortillas to create smothered chicken tacos. Store leftovers in an airtight container in the refrigerator for 3-4 days; reheating in the oven or microwave.
