Ingredients
  

Salad Base
  • 4 oz Grilled chicken Grilled and sliced into strips
  • 1 cup Black beans Canned or cooked
  • 1 cup Sweet corn Fresh or frozen
  • 4 cups Romaine lettuce Chopped
  • 1 each Avocado Diced, added just before serving
  • 1 cup Cherry tomatoes Halved
Dressing
  • 1/4 cup Chipotle-lime dressing Can substitute with vinaigrette or ranch dressing

Method
 

Preparation
  1. Grill the chicken until it’s fully cooked, then slice it into strips.
  2. In a large bowl, combine the black beans, sweet corn, romaine lettuce, diced avocado, and halved cherry tomatoes.
  3. Arrange the grilled chicken slices on top of the salad mixture.
  4. Drizzle the entire salad with chipotle-lime dressing.
  5. Toss gently to mix all the ingredients together and serve immediately.

Notes

Keep leftover salad components separate for crispy greens. Store in airtight containers in the refrigerator for up to three days. For best freshness, consume salad with added dressing within one day. Marinate chicken beforehand for extra flavor, and consider adding diced jalapeños for heat.
