  • 2 tablespoons sugar
  • 1 tablespoon baking powder Can substitute with 1/4 teaspoon baking soda and 1/2 teaspoon vinegar.
  • 1/2 teaspoon salt
  • 1 cup milk Dairy-free options available like almond or oat milk.
  • 1 large egg
  • 2 tablespoons melted butter
  • 1 teaspoon vanilla extract
  • 1/2 cup cinnamon sugar For topping.

Method
 

Preparation
  1. In a large bowl, whisk together the flour, sugar, baking powder, and salt until well combined.
  2. In another bowl, mix the milk, egg, melted butter, and vanilla extract until smooth.
  3. Pour the wet ingredients into the dry ingredients. Stir gently until just combined; be careful not to overmix.
Cooking
  1. Heat a non-stick skillet over medium heat and lightly grease it with cooking spray or butter.
  2. Pour 1/4 cup of batter onto the skillet for each pancake.
  3. Cook until bubbles form on the surface, then carefully flip and cook until golden brown.
  4. Remove from the skillet and immediately sprinkle with cinnamon sugar.
  5. Repeat the process with the remaining batter, serving warm and fresh.

Notes

These pancakes are great on their own or served with fresh fruit, whipped cream, or chocolate sauce. Store leftovers in an airtight container in the fridge for up to three days or freeze them for up to a month.
