Ingredients
  

Wrap Filling
  • 400 g canned chickpeas Rinsed and drained
  • 2 medium ripe avocados Mashed until smooth
  • ½ medium red onion Diced
  • 1 medium bell pepper Diced, can be substituted
  • 1 small jalapeño Diced, adjust spice to taste
  • 2 tbsp lime juice Freshly squeezed
  • 1 tsp chili powder
  • 1 tsp cumin
  • 1 tsp smoked paprika
  • 1 tsp garlic powder
  • 1 tsp salt Adjust to taste
  • 1 tsp black pepper Adjust to taste
Tortillas
  • 4 large tortillas Warmed for pliability

Method
 

Preparation
  1. Mash ripe avocados in a mixing bowl until smooth.
  2. Add canned chickpeas, diced red onion, bell pepper, jalapeño, and lime juice.
  3. Stir in chili powder, cumin, smoked paprika, garlic powder, salt, and pepper until well combined.
Assembling Wraps
  1. Warm tortillas in a skillet or microwave to make them pliable.
  2. Divide filling evenly among tortillas and add any optional toppings like fresh cilantro or shredded lettuce.
  3. Fold in the sides of each tortilla and roll tightly to form wraps.
  4. Cut wraps in half for easier handling and serve immediately.

Notes

These wraps can be served with salsa, salad, Greek yogurt, or a squeeze of lime. Leftovers can be stored in an airtight container in the refrigerator for 1-2 days.
