  • 1.5 lbs 3-4 boneless, skinless chicken breasts Feel free to swap with rotisserie chicken for convenience.
  • 8 oz spaghetti Cook until al dente.
  • 2 cups shredded sharp cheddar cheese Use a different cheese if preferred.
  • 1 cup fresh bell peppers (chopped)
  • 1 can cream of chicken soup (10.5 oz)
Spices and Seasonings
  • 1 tsp paprika
  • 1/2 tsp cayenne pepper Adjust to taste.
  • 1 tsp garlic powder
Garnish
  • 1/4 cup green onions (sliced) For garnishing before serving.

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C) and grease a large casserole dish.
  2. In a large pot, cook the chicken over medium heat for about 6-7 minutes per side until golden and fully cooked. Remove the chicken and shred it.
  3. In salted boiling water, cook the spaghetti until al dente, about 8-10 minutes. Drain and set aside.
  4. In a mixing bowl, combine the shredded chicken, cooked spaghetti, cream of chicken soup, chopped bell peppers, paprika, cayenne pepper, garlic powder, and half of the shredded cheddar. Mix until thoroughly combined.
Assembly and Baking
  1. Pour the mixture into the greased casserole dish and sprinkle the remaining cheddar on top.
  2. Bake for 25-30 minutes, or until bubbly and golden brown at the edges.
  3. Let it rest for 5 minutes before garnishing with sliced green onions and serving.

Notes

Pair with a crisp green salad, garlic bread, or steamed vegetables. Store leftovers in an airtight container for up to 3-4 days in the refrigerator, or freeze for up to 3 months.
