  • 1 cup spinach, cooked and drained Fresh or frozen works!
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • to taste Salt and pepper
  • 1 cup shredded cheese (optional) You can swap for a dairy-free alternative if needed.
  • to taste Olive oil Drizzle over the chicken to keep it moist.

Preparation
  1. Preheat your oven to 375°F (190°C) so it’s ready when your chicken is.
  2. In a mixing bowl, combine the softened cream cheese, cooked spinach, garlic powder, onion powder, salt, and pepper. Mix until smooth and well combined.
  3. Carefully cut a pocket into each chicken breast, ensuring not to cut all the way through.
  4. Spoon the creamy spinach mixture into each pocket, filling them generously.
  5. If you’re using it, sprinkle the shredded cheese over the stuffed chicken for an extra layer of flavor.
  6. Place the stuffed chicken breasts in a greased baking dish. Drizzle olive oil over the top to keep them moist.
  7. Bake for 25-30 minutes until the chicken is cooked through and golden brown.

Notes

Don’t over-stuff the chicken to prevent it from bursting while baking. Season the outside for added flavor and experiment with fresh herbs like basil or parsley for extra taste.
