Ingredients
  

Chicken and Seasoning
  • 2 pieces boneless, skinless chicken breasts
  • 1 tablespoon olive oil (divided)
  • 1 teaspoon garlic powder
  • 1/2 teaspoon smoked paprika
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper
Filling Ingredients
  • 1 cup chopped fresh spinach (or thawed frozen spinach) Frozen spinach works well as a substitute.
  • 2 cloves garlic, minced
  • 1/3 cup cream cheese
  • 1/4 cup shredded mozzarella cheese
  • 2 tablespoons grated parmesan cheese
  • 1/2 teaspoon Italian seasoning
  • 1 teaspoon lemon juice
  • Toothpicks or kitchen twine for securing

Method
 

Preparation
  1. Butterfly each chicken breast horizontally, being careful not to cut all the way through.
  2. Pat the chicken breasts dry and season both sides with garlic powder, smoked paprika, salt, and black pepper.
  3. Heat 1/2 tablespoon of olive oil in a pan over medium heat. Add minced garlic and spinach; sauté for about 2 minutes until wilted.
  4. Transfer the sautéed spinach to a bowl. Add cream cheese, mozzarella, parmesan, Italian seasoning, and lemon juice. Mix well to combine.
  5. Carefully stuff each chicken breast with the spinach mixture and secure them with toothpicks or kitchen twine.
  6. Preheat your oven to 375°F (190°C).
Cooking
  1. In an oven-safe skillet, heat the remaining olive oil over medium-high heat. Sear the stuffed chicken breasts for about 3–4 minutes on each side until golden brown.
  2. Transfer the skillet to the oven and bake for about 20–25 minutes, or until the internal temperature reaches 165°F (74°C).
  3. Once done, remove the chicken from the oven and let it rest for about 5 minutes before slicing.
Serving
  1. Slice and serve warm to enjoy the melty goodness.

Notes

Best when paired with roasted vegetables, creamy mashed potatoes, or a fresh garden salad. Store leftovers in an airtight container; refrigerate for up to 3 days or freeze for longer storage.
