  • 2 tablespoons rice vinegar
  • 1 tablespoon sesame oil
  • 3 cloves garlic, minced
  • 1 teaspoon fresh ginger, grated
  • 1 pinch red pepper flakes Optional for extra spice.
  • Sesame seeds, for garnish
  • Green onions, chopped, for garnish

Method
 

Preparation
  1. Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.
  2. Toss the cauliflower florets with olive oil on the prepared baking sheet, ensuring they are evenly coated. Spread them in a single layer for optimal roasting.
Cooking
  1. Roast the cauliflower for 20 to 25 minutes, flipping them halfway through, until they are tender and slightly browned.
  2. While the cauliflower is roasting, prepare the sauce. In a small saucepan, combine the honey, soy sauce, rice vinegar, sesame oil, minced garlic, grated ginger, and red pepper flakes if using.
  3. Heat the sauce mixture over medium heat, stirring constantly until it simmers and thickens slightly—this should take about 3 to 5 minutes. Once thickened, remove from heat.
  4. Once the cauliflower is roasted, transfer it to a large bowl. Pour the warm honey garlic sauce over the cauliflower and toss gently until every piece is coated and sticky.
  5. Serve immediately, garnished generously with sesame seeds and chopped green onions.

Notes

Store leftovers in an airtight container in the refrigerator for about 3 to 4 days. Reheat to restore crispy texture, or use a microwave for a quicker option. You can freeze after roasting, just ensure it's fully cooled before packaging and can last for up to 2 months.
