Preparation
- Preheat your oven to 375°F (190°C).
- Make the crumb mixture by combining the flour, brown sugar, and baking powder in a bowl.
- Add in the melted butter, egg, and vanilla. Mix well using a fork or your hands; do not knead the dough.
- Set this crumb mixture aside.
Cheesecake Filling
- For the cheesecake filling, beat together the softened cream cheese, vanilla, powdered sugar, and egg using a hand mixer until completely smooth.
Strawberry Topping
- Create the strawberry topping by mixing chopped strawberries, lemon juice, lemon zest, white sugar, and cornstarch in a separate bowl.
Baking
- In an 8x8 inch pan lined with parchment paper, firmly press half of the crumb mixture into the bottom to form a base.
- Spread the cheesecake filling evenly over the crumb base.
- Spoon the strawberry mixture on top, discarding any excess liquid.
- Crumble the remaining crumb mixture over the strawberries.
- Bake for 40-45 minutes, or until the top is golden brown and the edges are bubbly.
- Allow the bars to cool for at least 30 minutes before slicing.
Notes
Store leftovers in an airtight container in the refrigerator for about 3-4 days. For longer storage, wrap tightly in plastic wrap and freeze for up to three months.
