  • 4 pieces boneless, skinless chicken breasts
  • 8 oz cream cheese, softened Low-fat cream cheese can be used for a lighter version.
  • 2 cups fresh spinach, chopped Frozen spinach can be substituted; just thaw and drain.
  • 1 cup mozzarella cheese, shredded Can substitute with other cheeses like cheddar or gouda.
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • to taste salt and pepper
  • as needed olive oil for cooking

Method
 

Preparation
  1. Preheat the oven to 375°F (190°C).
  2. In a bowl, combine the softened cream cheese, chopped spinach, shredded mozzarella, garlic powder, onion powder, salt, and pepper until everything is well mixed.
  3. Slice a pocket into each chicken breast carefully, being mindful not to cut all the way through.
  4. Stuff each pocket with the cream cheese mixture, ensuring it’s filled generously.
Cooking
  1. Heat olive oil in a skillet over medium heat. Sear the stuffed chicken for about 4-5 minutes on each side until they are golden brown.
  2. Transfer the chicken to a baking dish and bake for 20-25 minutes, or until the chicken is cooked through.
  3. Let it rest for a few minutes before serving.

Notes

For added flavor, try marinating the chicken in Italian dressing for an hour before stuffing. To prevent leaking, consider toothpicking the opening once filled. Creative twists include adding cooked bacon or swapping the cream cheese for ricotta, and experimenting with herbs or topping with parmesan before baking.
