Preparing the Batter
- Gather your ingredients: heavy cream, all-purpose flour, sugar, eggs, baking powder, and vanilla extract.
- In a large mixing bowl, combine the dry ingredients: flour, sugar, baking powder, and a pinch of salt. Whisk together to distribute evenly.
- In another bowl, whisk the wet ingredients: heavy cream, eggs, and vanilla extract until smooth.
- Gradually pour the wet mixture into the dry ingredients. Stir gently until just combined. Let the batter rest for 5–10 minutes.
Cooking the Pancakes
- Preheat a non-stick pan or griddle over medium heat. Lightly grease with butter or cooking spray.
- Pour about ¼ cup of batter onto the pan for each pancake, spacing evenly.
- Cook for 2–3 minutes, or until bubbles appear on the surface and edges are set.
- Flip the pancakes and cook for an additional 2 minutes until golden brown.
- Transfer cooked pancakes to a plate and cover with foil to keep warm.
