  • 1 cup spinach, chopped

Method
 

Preparation
  1. Preheat your oven to 375°F (190°C).
  2. In a large skillet, heat the olive oil over medium heat. Add the diced onion and sweet potatoes. Sauté for about 10 minutes, until the sweet potatoes are tender.
  3. While the veggies are cooking, whisk together the eggs, milk, salt, and pepper in a separate bowl until well blended.
  4. Grease a baking dish and layer in the sautéed sweet potatoes, chopped spinach, and cheese.
  5. Pour the egg mixture evenly over the layered ingredients.
Baking
  1. Bake for 25-30 minutes, or until the eggs are set and the top is lightly golden.
  2. Allow it to cool for a few minutes before slicing and serving.

Notes

This casserole is delicious on its own, but consider serving it with fresh fruit or a light salad. It pairs beautifully with a zesty vinaigrette or a dollop of Greek yogurt on top.
