Method
Preparation of Meat Filling
- Heat a large skillet over medium heat. Add 1 lb of ground beef or ground turkey and break it up with a wooden spoon or spatula.
- Cook until the meat is browned and fully cooked, about 5–7 minutes. Drain any excess fat if necessary.
- Sprinkle 1 packet of taco seasoning over the browned meat. Stir in ½ cup of water and mix well.
- Allow the mixture to simmer for 3–5 minutes until the liquid reduces.
- Optional: Stir in 1 cup of black beans, 1 cup of corn, or a small can of chopped green chilies. Cook for an additional 2 minutes.
Preheat the Oven
- Set your oven to 375°F (190°C).
- Lightly grease a 9x13-inch baking dish with cooking spray or oil.
Layering the Taco Lasagna
- Lay down 2 large tortillas, slightly overlapping, to cover the bottom of the dish.
- Spread a thin layer of refried beans (about ⅓ of the can) over the tortillas.
- Spoon ⅓ of the seasoned meat mixture evenly over the beans.
- Pour ½ cup of salsa over the meat and sprinkle ⅔ cup of shredded cheese on top.
- Repeat with 2 more tortillas and the remaining layers.
- For the final layer, top with 2 tortillas, spread remaining salsa, and sprinkle extra cheese.
Baking the Taco Lasagna
- Cover the dish with aluminum foil and bake for 20 minutes.
- Uncover and bake for an additional 10–15 minutes until bubbly and golden.
Serving
- Let the taco lasagna rest for 5–10 minutes.
- Add toppings like sour cream, guacamole, cilantro, or jalapeños before serving.
Notes
Customize with different meats, vegetables, or spice levels. Assemble in advance and bake later or freeze for future meals.
