  • 1 lb ground beef or turkey Can be substituted with plant-based ground meat
  • 1 can black beans Drained
  • 1 can kidney beans Drained
  • 1 can corn Drained
  • 1 can diced tomatoes
  • 1 packet taco seasoning Adjust based on heat tolerance
  • 2 cups beef or vegetable broth Vegetable broth for vegetarian option
  • 1 onion, chopped Can use frozen onions
  • 1 bell pepper, chopped Can use frozen peppers
  • Salt and pepper To taste

Method
 

Preparation
  1. In a large pot, over medium heat, cook your ground beef or turkey until it’s fully browned. Drain any excess fat.
  2. Add your chopped onion and bell pepper. Sauté until tender, about 3-5 minutes.
  3. Mix in the taco seasoning, black beans, kidney beans, corn, diced tomatoes, and beef or vegetable broth.
  4. Bring the mixture to a boil, then reduce the heat and let it simmer for about 20 minutes.
  5. Adjust the seasoning with salt and pepper to taste, and serve hot.

Notes

For added flavor, garnish with fresh cilantro, sliced avocado, or shredded cheese. Serve with warm tortilla chips or cornbread. Can be customized for dietary needs.
