  • 1 lb ground beef (or turkey) Substitute for a leaner option.
  • 1 can black beans, drained and rinsed
  • 1 can corn, drained
  • 1 can diced tomatoes with green chilies
  • 1 packet taco seasoning
  • 4 cups beef broth Can substitute with chicken broth.
  • 1 cup onion, chopped
  • 1 cup bell pepper, chopped
  • to taste pinch salt and pepper

  • to taste shredded cheese
  • to taste avocado
  • to taste tortilla chips

Cooking
  1. In a large pot over medium heat, brown the ground beef until fully cooked, breaking it into small pieces as you go. Afterward, drain the excess fat.
  2. Add the chopped onion and bell pepper to the pot, sautéing until softened and fragrant.
  3. Stir in the taco seasoning and allow it to cook for an additional minute to infuse the flavor.
  4. Combine the black beans, corn, diced tomatoes, and beef broth to the pot, stirring well.
  5. Bring the mixture to a boil. Then, reduce the heat to a simmer and let it cook for about 20 minutes for the flavors to meld beautifully.
  6. Season with salt and pepper to your liking. Adjust according to your taste preference.
  7. Serve hot, garnished with your choice of toppings, and enjoy every spoonful!

Notes

Store in the refrigerator for up to 3-4 days or freeze for longer storage. For a thicker consistency, mash some beans before adding them.
