Ingredients

Main Ingredients
  • 2 cups cooked chicken (shredded or diced) Rotisserie chicken works well for convenience.
  • ¼ cup fresh tarragon leaves (chopped) Use fresh for best flavor; dried can be used in smaller quantities.
  • ½ cup mayonnaise Choose high-quality mayonnaise or make your own.
  • 1 tbsp Dijon mustard
  • 1 tbsp freshly squeezed lemon juice Brightens the flavors.
  • 2 stalks celery (diced) Adds crunch.
  • Salt and freshly cracked black pepper to taste Use freshly cracked black pepper for a subtle kick.
Optional Add-Ins
  • ½ cup red grapes (halved) Adds sweetness and color.
  • ¼ cup slivered almonds or pecans Provides a nutty crunch.
  • 2 tbsp green onions or chives (sliced) Enhances flavor.

Method

Preparing the Chicken
  1. If not using pre-cooked chicken, poach 2 chicken breasts in lightly salted water with aromatics for about 15 minutes or until fully cooked. Let cool before shredding or dicing.
  2. Cut the chicken into bite-sized pieces to ensure even distribution of flavors.
Making the Dressing
  1. In a mixing bowl, whisk together mayonnaise, Dijon mustard, and lemon juice until smooth.
  2. Add salt and freshly cracked black pepper to taste. Start with a pinch of each and adjust as needed.
Assembling the Salad
  1. In a large bowl, combine the chicken, celery, and chopped fresh tarragon.
  2. Pour the dressing over the chicken mixture and gently toss to coat everything evenly.
Optional Add-Ins
  1. For sweetness, mix in halved red grapes.
  2. Add slivered almonds or pecans for a crunchy texture.
  3. Sprinkle in green onions or chives for an extra layer of flavor.
Serving the Salad
  1. Cover the bowl with plastic wrap and refrigerate for at least 30 minutes to let the flavors meld.
  2. Enjoy on a croissant, in a wrap, over a bed of greens, or on its own.

Notes

Store leftover salad in an airtight container in the fridge for up to 3 days. Refrigerate before serving to allow flavors to meld.
