Tex Mex Ground Beef and Rice Bake: The One-Dish Dinner You’ll Make Again

Ingredients
  

  • 1 lb 450g ground beef (85/15 lean)
  • 1 small onion diced
  • 1 red or green bell pepper chopped
  • 1 tbsp olive oil
  • 1 packet taco seasoning or homemade
  • 2 cloves garlic minced
  • 1 can 10 oz diced tomatoes with green chiles, drained
  • 1 cup cooked rice long-grain or jasmine
  • 1/2 cup corn canned or frozen, drained
  • 1/2 cup black beans drained and rinsed
  • 1/2 cup beef broth as needed
  • 1 1/2 cups shredded cheddar or Monterey Jack cheese
  • Salt and pepper to taste

Method
 

  1. Preheat oven to 350°F (175°C) and grease a 9×13-inch baking dish.
  2. In a large skillet, sauté onion and bell pepper in olive oil until softened.
  3. Add ground beef and cook until browned. Drain any excess fat.
  4. Stir in taco seasoning, garlic, and diced tomatoes. Simmer for 2–3 minutes.
  5. Mix in cooked rice, corn, and black beans. Add broth if the mixture seems dry.
  6. Transfer mixture to baking dish and spread evenly.
  7. Top with shredded cheese.
  8. Bake uncovered for 25–30 minutes, until hot and bubbly.
  9. Broil for 2–3 minutes if desired for a crispy cheesy top.
  10. Let rest 5 minutes before serving.

Notes

Top with avocado, salsa, or sour cream. You can also stir in cream cheese or hot sauce before baking for extra richness and heat.
