Method
- Preheat oven to 350°F (175°C) and grease a 9×13-inch baking dish.
- In a large skillet, sauté onion and bell pepper in olive oil until softened.
- Add ground beef and cook until browned. Drain any excess fat.
- Stir in taco seasoning, garlic, and diced tomatoes. Simmer for 2–3 minutes.
- Mix in cooked rice, corn, and black beans. Add broth if the mixture seems dry.
- Transfer mixture to baking dish and spread evenly.
- Top with shredded cheese.
- Bake uncovered for 25–30 minutes, until hot and bubbly.
- Broil for 2–3 minutes if desired for a crispy cheesy top.
- Let rest 5 minutes before serving.
Notes
Top with avocado, salsa, or sour cream. You can also stir in cream cheese or hot sauce before baking for extra richness and heat.
