  • Juice of 1 orange and 1 lemon

Method
 

Preparation
  1. For pan-seared chicken: Heat olive oil in a skillet over medium-high heat. Season the chicken breasts with salt and pepper. Sear each side for 2 to 3 minutes until golden brown. Add garlic and sauté for 30 seconds, then pour in lemon juice and let cook for an additional 1 to 2 minutes.
  2. For baked chicken: Preheat your oven to 400°F (200°C). Combine Parmesan, breadcrumbs, garlic powder, and Italian seasoning in a shallow dish. Dip each chicken breast in the beaten egg, then coat with the breadcrumb mixture. Arrange on a baking sheet and bake for 15 to 18 minutes until golden.
  3. For grilled chicken: Whisk together citrus juices, olive oil, garlic, oregano, salt, and pepper for the marinade. Marinate the chicken for 20 to 30 minutes. Preheat the grill to medium heat and grill the chicken for 2 to 3 minutes per side.
  4. For one-pot stir-fry: Heat olive oil in a large skillet or wok over medium heat. Cook the chicken strips until golden, then remove. Add vegetables, sauté until tender, return chicken, and stir in soy sauce, oyster sauce, and sesame oil. Add cooked noodles, toss and heat through.

Notes

Allow chicken to rest for 3-5 minutes after cooking to retain juices. Marinate chicken for extra flavor and moisture.
