  • 2 cans canned white beans (e.g., cannellini), drained and rinsed Can use dried beans, soaked overnight and cooked separately.
  • 4 cups fresh spinach Can substitute with kale for a different texture.
  • 2 tbsp olive oil For sautéing vegetables.
  • 1 teaspoon thyme, dried
  • 1 teaspoon rosemary, dried
  • 1 teaspoon salt Adjust to taste.
  • 1/2 teaspoon black pepper Adjust to taste.

Method
 

Cooking
  1. Heat olive oil in a large pot over medium heat.
  2. Sauté chopped onion, carrots, and celery until softened.
  3. Add minced garlic and cook for another minute.
  4. Incorporate the Italian sausage, breaking it up with a spoon; cook until browned.
  5. Pour in vegetable broth and bring to a simmer.
  6. Add canned white beans, thyme, rosemary, salt, and pepper; let it cook for 15-20 minutes to allow the flavors to meld.
  7. Stir in fresh spinach and cook until wilted.
  8. Serve warm and enjoy!
