Preparation
- Preheat your oven to 350 degrees F (175 degrees C).
- In a mixing bowl, combine the almond flour, oat flour, and salt for the base layer.
- Stir in the maple syrup, melted coconut oil, and vanilla extract until fully combined.
- Transfer the mixture to a greased or lined 8x8 baking dish and evenly flatten it to form the base. Set aside.
Berry Filling
- In a pot, combine the berries, 1 1/2 tablespoons of maple syrup, and 1 tablespoon of water.
- Heat over low to medium heat. As the berries soften, mash them with a potato masher or fork to eliminate large chunks.
- Add cornstarch and let the mixture simmer for 5-10 minutes until thickened. Once thick, transfer to a bowl and refrigerate to thicken further.
Crumble Topping
- In another bowl, mix oats, oat flour, almond flour, and salt.
- Add in the melted coconut oil, maple syrup, and vanilla extract. Combine until crumbly.
Assembly and Baking
- Remove the berry mixture from the fridge and pour it over the base layer. Spread evenly.
- Top with the crumble mixture, squeezing chunks between your fingers for a rustic look.
- Bake in the preheated oven for 25 minutes until golden.
- Let cool for about 10-15 minutes, cut into squares, and enjoy!
Notes
These bars can be served warm or at room temperature. For an extra special treat, consider topping them with vegan vanilla ice cream or coconut whipped cream. Store leftovers in an airtight container for up to five days in the fridge or freeze for up to three months.
