- Line a baking sheet with parchment paper.
- Slice your ripe bananas into thin rounds or halves and arrange them closely on the parchment paper.
- Spread a thin layer of peanut butter generously over the banana slices.
- In a microwave-safe bowl, melt the chocolate chips with coconut oil (if using) in 30-second intervals, stirring until smooth.
- Drizzle the melted chocolate evenly over the peanut butter layer.
- Sprinkle a pinch of sea salt on top.
- Freeze the baking sheet for at least 2-3 hours, or until the banana bark is firm.
- Once frozen, break or cut into bark pieces and store in an airtight container in the freezer.
Notes
Store in an airtight container in the freezer for up to a month. For best results, avoid leaving it out at room temperature.
