Ingredients
  

  • 1 cup cornmeal yellow or white
  • ½ cup all-purpose flour or rice flour for a gluten-free version
  • 1 teaspoon salt
  • ½ teaspoon black pepper
  • 1 teaspoon paprika regular or smoked
  • ½ teaspoon garlic powder
  • ½ teaspoon onion powder
  • ¼ teaspoon cayenne pepper optional for spice
  • 1 teaspoon baking powder for a lighter texture

Method
 

  1. In a large mixing bowl, combine cornmeal, flour, salt, black pepper, paprika, garlic powder, onion powder, cayenne pepper, and baking powder.
  2. Whisk everything together until well combined.
  3. Store the fish fry mix in an airtight container or ziplock bag in a cool, dry place.
  4. To use, dip fish fillets in buttermilk or an egg wash, then coat them evenly with the fish fry mix.
  5. Fry the coated fish in hot oil (350–375°F) until golden brown and crispy.
  6. Serve immediately with lemon wedges and dipping sauces.

Notes

  • For extra crunch, add ½ cup panko breadcrumbs to the mix.
