  • 1.5 cups canned (drained) or frozen corn
  • 2 cans great northern beans, drained (15.9-ounce each)

  • 1 teaspoon salt
  • 0.5 teaspoon pepper
  • 1.5 teaspoons cumin
  • 0.5 teaspoon oregano
  • 0.5 teaspoon chili powder Adjust for spice preference
  • 0.5 cup heavy cream Can substitute with Greek yogurt or coconut milk for lighter option

Method
 

Cooking Process
  1. Heat the olive oil in a Dutch oven over medium heat.
  2. Add the cubed chicken and diced onion. Sauté until the chicken is no longer pink and the onion becomes translucent.
  3. Stir in the minced garlic and cook for another 30 seconds, until fragrant.
  4. Add the remaining ingredients, except for the heavy cream. Stir to combine everything well.
  5. Cover the pot and let it simmer for about 20 minutes, allowing the flavors to meld.
  6. Once cooked, remove from heat and stir in the heavy cream along with chopped cilantro, if desired.
  7. Serve hot, garnished with optional toppings like avocado, sour cream, cheese, or tortilla chips.

Notes

For a southwestern flair, add black beans and diced tomatoes. For vegetarian, use mushrooms or additional beans.
