  • 1 lb boneless, skinless chicken breasts
  • 1 medium onion, diced
  • 2 cloves garlic, minced
  • 1 can (15 oz) white beans, drained and rinsed
  • 1 can (15 oz) corn, drained
  • 1 can (4 oz) diced green chiles
  • 4 cups chicken broth
  • 1 tsp cumin
  • 1 tsp chili powder
  • Salt and pepper to taste
  • 1 cup shredded cheese (optional)
  • Sour cream and cilantro for garnish (optional)

Method
 

Preparation
  1. Heat a little oil in a large pot over medium heat.
  2. Sauté the diced onion and minced garlic until the onion becomes translucent, around 3-4 minutes.
  3. Add the chicken breasts to the pot and cook until they’re nicely browned on all sides, about 5-6 minutes.
Cooking
  1. Stir in the white beans, drained corn, diced green chiles, chicken broth, cumin, and chili powder.
  2. Bring the mixture to a boil, then reduce the heat and let it simmer for about 20 minutes.
  3. Shred the chicken right in the pot using two forks, mixing it well with the other ingredients.
  4. Season with salt and pepper to your liking.
Serving
  1. Serve hot, topped with shredded cheese, a dollop of sour cream, and fresh cilantro.

Notes

Enjoy with warm tortillas or crispy tortilla chips; leftovers can be stored in the fridge for up to 4 days or frozen for up to 3 months. For variation, add in bell peppers or zucchini.
