  • 1 can cream cheese (8 oz)
  • 1 can diced green chilies (4 oz)
  • 1 can corn (15 oz)
  • 4 cups chicken broth

  • 1 teaspoon cumin
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • Salt and pepper to taste

Preparation
  1. In a large pot or slow cooker, combine the chicken broth, shredded chicken, cream cheese, diced green chilies, corn, cumin, garlic powder, onion powder, salt, and pepper.
  2. If you’re opting for the stovetop, bring the mixture to a simmer and let it cook for about 20-25 minutes until everything is heated through. For a slow cooker, set it on low for 4-6 hours or high for 2-3 hours.
  3. Remember to stir occasionally to ensure that the cream cheese melts and combines evenly into the chili.
  4. Once done, serve hot and enjoy with your favorite sides!

Notes

Garnish with fresh cilantro, a squeeze of lime, or a dollop of sour cream. Store in an airtight container for 3-4 days in the fridge or freeze for up to 3 months.
