  • 1 pound cooked chicken, shredded You can use rotisserie chicken to save time.
  • 1 can white beans, drained and rinsed Feel free to swap for other beans.
  • 1 can diced green chilies
  • 1 cup chicken broth Use vegetable broth for a vegetarian version.
  • 1 cup heavy cream or coconut milk Use coconut milk for a dairy-free option.
  • 1 onion, diced
  • 2 cloves garlic, minced Roasting the garlic can enhance flavor.
  • 1 teaspoon cumin
  • 1 teaspoon chili powder
  • Salt and pepper To taste.
  • Fresh cilantro for garnish

Method
 

Preparation
  1. Heat a large pot over medium heat. Add the diced onion and minced garlic. Sauté until they’re soft and fragrant.
  2. Stir in the shredded chicken, white beans, green chilies, chicken broth, heavy cream, cumin, chili powder, salt, and pepper.
  3. Mix everything together, and bring the mixture to a gentle simmer.
  4. Allow it to cook for about 15-20 minutes, stirring occasionally to prevent sticking.
  5. Serve hot, topped with fresh cilantro for that extra burst of flavor.

Notes

Pair with warm cornbread or tortilla chips. Leftovers can be stored in an airtight container for up to three days, or frozen for up to three months. Adjust the heat level by adding cayenne pepper or jalapeños.
