- In a large pot, heat a drizzle of oil over medium heat and sauté the diced onions and minced garlic until they become translucent.
- Add in the chicken breasts, diced green chilies, chicken broth, cumin, chili powder, salt, and pepper. Stir well.
- Bring the mixture to a boil, then reduce the heat, and let it simmer for 20-25 minutes, or until the chicken is cooked through.
- Carefully remove the chicken from the pot, shred it using two forks, and return it back to the pot.
- Stir in the white beans, corn, and either sour cream or cream cheese until everything is creamy and well combined.
- Heat through for a few minutes, then serve hot, garnished with fresh cilantro if desired.
Notes
For best flavor, season to taste and feel free to add additional ingredients like diced bell peppers or jalapeños for a spicy kick. Storage: Refrigerate leftovers for up to four days. Freeze in portions for a quick meal later on.
