Ingredients
  

For the Chicken and Marinade
  • 2 pieces chicken breasts Boneless, skinless recommended
  • 1/4 cup olive oil
  • 2 tablespoons lemon juice Freshly squeezed preferred
  • 1 teaspoon dried oregano Or fresh if available
  • to taste Salt and pepper For seasoning
For the Tzatziki Sauce
  • 1 cup Greek yogurt
  • 1 cup cucumber, diced For freshness
  • 1 tablespoon dill Fresh or dried
  • 1 clove garlic, minced For flavor
  • to taste Salt For seasoning
For Assembling the Bowls
  • 2 cups cooked rice or quinoa Either works well
  • 1 cup cherry tomatoes, halved
  • 1/2 pieces red onion, thinly sliced
  • 1/2 cup Kalamata olives, pitted and sliced
  • 1/2 cup crumbled feta cheese

Method
 

Marinating the Chicken
  1. In a bowl, mix together the olive oil, lemon juice, oregano, salt, and pepper. Place the chicken breasts in the bowl and let them marinate for at least 30 minutes.
Preparing the Tzatziki Sauce
  1. While the chicken is marinating, combine the Greek yogurt, diced cucumber, dill, and minced garlic in a separate bowl. Mix well and season with salt to taste.
Grilling the Chicken
  1. Preheat the grill to medium heat. Grill the marinated chicken for about 6-7 minutes on each side or until fully cooked. Remove from the grill and let it rest before slicing.
Assembling the Bowls
  1. Divide the cooked rice or quinoa among serving bowls. Top each bowl with slices of grilled chicken, diced cucumbers, cherry tomatoes, red onion, olives, and crumbled feta cheese.
Adding the Tzatziki Sauce
  1. Drizzle the tzatziki sauce over each bowl, and serve immediately.

Notes

Greek Chicken Bowls can be served warm or stored in the fridge for up to three days. For added flavor, use fresh herbs or try different proteins such as shrimp or tofu.
